This simple recipe for paleo curried sausages has very quickly become a favourite in our household.
Previously we made this using flour, butter and milk which tasted nice but is really gluggy and sat heavy in our stomachs.
Instead of using those ingredients this recipe uses cauliflower rice and coconut milk to form the curry sauce.
Give it a try, the kids have enjoyed it just as much as we did.
- 1 head of cauliflower, coarsely chopped
- 1 tbsp coconut oil
- Salt, to taste
- 1 medium onion, diced
- 1 tsp turmeric
- 1/2 tsp curry powder
- 1 cup coconut milk
- 4 sausages
Place the cauliflower into a food processor and pulse until reduced to the size of rice grains. Set aside.
Heat the coconut oil in a nonstick skillet over medium heat. Add the onion and sauté for 4-5 minutes until soft.
Stir in the turmeric and curry powder.
Stir in the cauliflower and season with salt and pepper to taste.
Pour in the coconut milk and cover.
Simmer for 7-10 minutes until the cauliflower is soft, stirring regularly.
Meanwhile, brown the sausage in a separate skillet over medium-high heat.
Serve over the curried cauliflower.
