What could possible be better than Paleo Banana Bread? How about Paleo Banana Chocolate Muffins?
These were amazing. Simple recipe, easy to cook and they taste great!
2 Tablespoons coconut oil
1/3 cup coconut sugar
1 teaspoon vanilla extract
1 cup almond meal
1/4 cup coconut flour
1/3 cup cacao powder
1 teaspoon baking soda
1 teaspoon baking powder
Preheat oven to 180 degrees celcius.
I ground up that almost first, although if you’ve got almond meal do the bananas first.
Then add the bananas in the mixer and mix until well mashed.
Add coconut oil, coconut sugar, egg, vanilla and continue to mix on until well combined. Add almond meal if you didn’t earlier, coconut flour, cacao, baking soda, and baking powder and beat on mix again until well combined.
Spoon mixture into the prepared muffin tray.
Bake for 20-25 minutes.
