Paleo Banana Bread

There are a lot of banana bread recipes out there but I’ve found a lot of them to be too heavy. This one is nice and light without overdoing the flour alternatives.


  • 4 bananas
  • 4 eggs
  • 4 Tbsp butter
  • 1 tsp vanilla extract
  • 1/2 cup almonds (grind these to make the almond meal)
  • 1/2 cup coconut flour
  • 1 Tbsp Cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of salt


Mix the other bananas, eggs, butter and vanilla until it’s all combined well.

Slowly add in the dry ingredients until its well mixed.

Transfer mix to a 9 inch square tin lined with baking paper.

Cook for 25-30 minutes on 180 degrees.
